To ease Casey’s departure for work, I may cook up a thing or two while he is doing his daily devotions. This is not an everyday thing but if it helps his day go smoothly then I’m happy, he’s happy and everyone’s happy. And hopefully that energy can work its way into the workplace like a domino effect.
So this morning, I made him an
Easy Egg Breakfast Burrito
5 mini peppers (I got this bulk bag of mini peppers from Cost-U-Less)
Ketchup or hot sauce
Salt and Pepper
1. Heat a little olive oil on low heat in a small pan (we use cast iron and some awesome Amway cookware that my in laws gave us for our wedding years ago and they’re still in great condition). Slice up the peppers into thin slices and stir-fry on low heat. Set aside.
2. Heat some olive oil and a tablespoon of butter in a large pan on high heat. After the oil and butter is heated, lower the heat. Crack the eggs right into the heated oil and butter. Add your desired amount of salt and pepper. Then scramble with a spatula in a figure 8 motion. Set aside.
3. Heat very little olive oil in a large pan on high heat. Switch to low heat after oil is heated. Drop a tortilla and build the burrito. Some egg, some peppers, squirt a little bit of ketchup or hot sauce, and top with some cheddar cheese that has been shredded or sliced into thin pieces.
4. Fold in the sides and close and toast to your desired crispiness in the pan.
Variations: You can build your burrito with anything you want. Add a meat: bacon, sausage, ham. Add your favorite veggies besides pepper.
